Sacred Hill is a place with real folklore, an inspiring story about a local hermit who inhabited a low rocky outcrop which overlooks the Riverina plain. He still commands a venerable, almost mythical status in the locality, making his home in a cave on the hillside for many years. A juicy Cabernet Shiraz wine that's generously flavoured and lined with silky tannins, a match to wood fired pizza and tomato pasta or crisp duck and parsnip mash.
De Bortoli strive to make genuinely interesting wine styles with a strong regional focus that also offer outstanding value. The belief is that wine should have varietal detail and be a reflection of site and season. Wine should have a focus and a sense of place. Parcels of Cabernet and Shiraz grapes are selected whilst ripening in the vineyards on the basis of good flavour and fine tannin structure, plum and spice flavours, clean acids are a determining factor. Moderate fermentation temperatures and gentle extractions are employed to construct a soft wine. Following several days vinification on skins at 20C to 22C, components are treated to a selection of French and American oak. Alcohol 13.5%
Crimson red with hints of purple. Ripe plum and berry perfumes are enhanced by a background spiced vanilla oak. A balance of currant, cassis and spiced plum flavours, dark cherry notes are combined with the savouryness of supporting oak. A medium bodied wine with lovely soft tannins and a clean, lingering finish.
