Riverina New South Wales
A thoroughly invigorating, strawberry pink wine, fashioned from harvests grown to some of De Bortoli's most radiant resources on the Riverina. Exquisitely balanced between sweetness of fruit and crisp, drying tannins, Sacred Hill is fashioned to be refreshing and to drink brilliantly with good food. The ideal accompaniement to cold meats and pizzette, prosciutto melone or a fry of the freshest sardines.
The team at Sacred Hill aim to achieve a balance of fruit and flavour, texture and colour. The ultimate mix of fruit for an attractive pink coloured wine is largely determined by the quality of vintage. Grapes are harvested throughout the cool of night from choice vineyards at optimal levels of beaume to preserve fresh fruit characters and achieve a fruity, lighter and more elegant style. Grapes are crushed and cold soaked on skins for a day or two for the extraction of soft rose hues and just the right amount of tannin for texture and structure. The musts are pressed into fermenters and treated to a cool temperature controlled vinification at 12°C to 14°C over a term of two or three weeks. Alcohol 12.5%
Soft salmon pink blush. Attractive fresh berry aromas with a hint of spice, pomegranate and sweet, ripe, lifted vibrant red fruits on the bouquet. An array of berry and cherry flavours on the palate, a touch of rose petal and spice, finishing with a touch of sweetness and lovely crispness. Enjoy while fresh and young alongside nibbles and grilled seafood, tapas and Al fresco.
