Il Vescovo is the Bishop, a medium bodied Sangiovese wine, vinified from grapes grown to the cooler climes of Kangarilla in McLaren Vale. Sangiovese is endowed with a distinctive and unique personality that exudes savouriness and rustic earthiness. The quintessential Italian red, it possesses vivacious natural acid levels which work closely with silky tannins to make it an exemplary accompaniement to food. Styled to the new wave of super Tuscans, Il Vescovo exhibits lifted berry fruit flavours, solid structure and a multi dimensional palate.
Sangiovese offers unique savoury fruit characters and the most splendid tannins. Parcels are sourced from Chapel Hill's Kangarilla vineyard located at the foothills of the Mount Lofy Ranges on the eastern border of McLaren Vale. This mesoclimate is ideal for encouraging Sangiovese to reveal all of its varietal charm. Grapes are vinified in small open fermenters and gently hand plunged to encourage the preferential extraction of subtle savoury qualities while avoiding any astringent tannins. After a total of nine days on skins the ferment is basket pressed and the wine racked into a selection of seasoned French oak barrels for sixteen months to encourage the expression of grainy varietal tannins.
Deep red in colour. Aromas of bay leaf, violets and pancetta. The palate is alive with flavours of sage, cherries and sun dried tomatoes, balanced by chalky tannins and a lingering savoury finish. The unique varietal charm of Il Vescovo commands interest, as the higher natural acidity and firm tannin of Sangiovese allows it to pair well with Mediterranean cuisine, particularly tomato based recipes.

Chapel Hill takes its name from the historic ironstone church built at the property in 1865

Chapel Hill Winery is entirely in the Hills Face Zone. In 1990 environmental consultants were briefed to advise regarding development in this sensitive rural preserve. The estate obtained planning approval from the Minister for Environment and Planning in 1991, and built the winery in 1993. Chapel Hill is the embodiment of the wine and food experience delivered using the best of environmental practices by people who are passionate about their product and the McLaren Vale winegrowing region.

Originally the Christian Bible church and parish school, the church closed in its centenary year (1965) and fell into disrepair until its restoration in the 1970s. The church is today a tourist attraction and serves as the cellar door at Chapel Hill. In December 2000 Chapel Hill changed ownership once more, this time being purchased by the Swiss family of Mr Thomas Schmidheiny. The Schmidheiny family also own Cuvaison Winery in California and vineyards in Argentina and Switzerland.

In 1994 the winery received a commendation for "A development sensitive to the environment in the Hills Face Zone". In 2003 Chapel Hill obtained planning approval to build the Chapel Hill Winery Gourmet Retreat, the boutique hotel and cooking facility.

Set into the hillside, constructed of stone in browns and greys, using recycled materials, the Gourmet Retreat construction is cognisant of minimising its impact on its vineyard environs. In 2005 the company received a merit award in the Nature Foundations Environment Award.
