Planted to a rocky hillock just east of township Clare, Mocandunda is a collaboration of three well seasoned vignerons, the Messrs Heinrich, Ackland and Faulkner. Heinrich grows fruit for a number of the nation's leading labels, Faulkner is one of Clare Valley's most accomplished agronomists, Ackland established the illustrious Mount Horrock Wines. Mocandunda was years in the making, one of the highest altitude terroirs in all Clare Valley, the extended autumns and dry grown vines, encourage a exceptional ripening of grapes, intense with varietal characters, magnificently balanced between natural fruit sugars, acidity and tannin. Mocandunda sell the lion's share of their crop to eminent brands, their harvests have claimed Winestate Trophy and South Australian Wine Of Year. A small cut from the finest pick of Mocandunda fruit is reserved for the estate's own label. Nothing less than the pinnacle of artisanal Australian sparkling winemaking is permitted to be bottled behind the Arras label. Slowly tiraged for a period of no fewer than five years, Brut Elite shows great complexity from the extended aging while exhibiting a brightness of fruit and structural elegance representative of truly world class sparkling wine.

Parcels of Chardonnay grapes with a slightly larger component of Pinot Noir are hand picked from the most prestigious vineyards within the comprehensive Hardy viticultural portfolio in Tasmania. Following a gentle whole bunch press and fining, individual batches are vinified on light grape solids before the completion of malolactic on primary ferment lees. Once clarified, the base wines are judiciously assembled to style and prepared for secondary fermentation in bottle. Extended maturation on yeast lees builds further complexity and depth of character into the wine. A traditional expedition dosage completes the process, adding the last components of complexity and ensuring precise palate balance. Alcohol 12.4%
Crystal clear with an extremely fine bead and persistent mousse, delicate colour of fresh straw with a bright green/ gold hue. On the nose, the wine has an unmistakably inviting and complex melange of aromas with influences of fresh oyster, sour dough yeast as well as the aromas of exotic spices, vanilla bean and nougat. An elegant, mineral palate structure with flavours evolving in the glass around lychee, truffle, cinnamon and lanolin. Exhibits fantastic persistence of flavour, the natural acidity and subtle quality oak tannins are the backbone of this textural wine. The cold climate, pristine environment and ancient soils are perfect for crafting world class sparkling wine. Tasmania's climate is significantly cooler than the mainland, with long summer daylight and maritime influences, which are Ideal conditions for long, slow and consistent fruit development. The House of Arras sources fruit from many outstanding vineyards in southern Tasmania and the south east coast.
