Gary and Nick Farr are father and son, they make wine together but aren't afraid to go head to head when their opinions differ. Constructed during early settlement by a supervisor of colonial convicts, at the very epicentre of the market gardens which serviced Hobart, Clarence House is a heritage listed manor which remains largely unaltered since the 1830s. It passed through several hands before being acquired by the Kilpatricks in 1993, who answered the call of Bacchus and established the grounds to vine. There are now sixteen hectares of viticulture, several significant Burgundy clones of Chardonnay and Pinot Noir, with smaller plantings of Sauvignon and Pinot Blanc, Merlot, Cabernet and Tempranillo. The purity of wine is a Burgundian tradition. At Maison Louis Jadot the philosophy is to respect origin of fruit, as each wine is encouraged to develop its own personality. Parcels of Pinot Noir typically grown to limestone over calcareous marl soils, are macerated for long periods in open wooden vats to extract colour and tannin. The base wines are all fermented by a number of dedicated growers over a the course of a fortnight, to the unique style of each individual sub region. At every stage of the process, human intervention is kept to a minimum. After final assemblage, the finished Cuvee is treated to an extended term of age, partly in small 228 litres oak barrels and partly in vats.
