Taylor's Clare Valley vineyards are a short scenic drive north of Adelaide, the family's wines are recognized internationally for their elegance and exemplary varietal charm. Exclusively estate grown Tempranillo is harvested to a timetable determined by complete physiological ripeness. A component is cold soaked for several days at 5°C prior to being inoculated, fermented and pressed to seasoned French oak hogsheads. Another parcel is vinified until mid ferment then pressed to barrel for completion. The balance is treated to traditional open fermenters and pressed to barrel for malolactic. Batches are matured several months in a selection of prior use French oak hogsheads before assemblage.
