Langhorne Creek can lay claim to the finest Cabernet Sauvignon. Vines are planted to sites which are rich in mineral and organic alluvial soils, nourished every year by annual floods. The ripening grapes are infused by the perfumes and chewy, gummy flavours of ubiquitous eucalypts, which line the shores of River Bremer. Cockfighter's Ghost found the ideal site, one that would yield harvests of the most exemplary Cabernet. An intense wine, brimming with blackcurrant and dark cherry flavours, fragrantly seasoned by a gentle frame of sweet French oak.
Langhorne Creek is renowned for Cabernet, the region has made made major contributions to the Australia's most popular brands and celebrated vintages for many decades. Following harvest, parcels are promptly delivered to the the historic Glen Elgin wineworks at Pokolbin for immediate crushing and pressing, transported throughout the cool of night to retain maximum freshness. Fruit is vinified in temperature controlled fermenters to a regimen which achieves maximum extraction of colour, flavours and tannin. Upon completion of ferments and a course of malolactic, Cockfighter's Ghost is matured in a selection of small 300L French oak barrels for a year before the final assemblage. Alcohol 14.0%
Deep red in colour. Vibrant blackcurrant bouquet, ripe fruit notes, mulberries and hints of vanilla oak. The palate is concentrated exhibiting dark fruit flavours of blackberry and blueberries, integrated with soft, super fine chocolate tannins to provide balance and length of flavour. A rich, concentrated Cabernet Sauvignon to complement braised cheek or venison.
