Cabernet Sauvignon McLaren Vale South Australia
There are no secrets at d'Arenberg, each grape must be the finest that McLaren Vale can produce and all wines are made by hand, to the most exacting standards under the meticulous scrutiny of Chester Osborn. The aim is to make the most generously proportioned, brilliantly balanced wines, supported by sound structure and just the right amount of oak. Most of Stump Jump is made from the fruit of very old bush vines, traditionally fermented and basket pressed before a judicious term of barrel age.
Stump Jump is an assemblage of many parcels of Merlot and Cabernet Sauvignon, which have flowed down from senior wines in the d'Arenberg stable. It also includes parcels from a range of new and client growers. Much of d'Arenberg's source vineyards have vines that are as old and gnarly as the original Osborn family plantings, many yield tonnages just as low. Red winemaking at d'Arenberg is very traditional and simplistic. All of the reds are fermented in headed down open fermenters prior to being pressed in traditional, hand operated basket presses. Following the vinification, Stump Jump is matured in a selection of well seasoned French and American barriques and larger format oak casks.
Bright ruby colour. The nose sings with essential Cabernet characters of cassis, dark plums, blueberries, mint and capsicum. Youthful and fresh, the palate has a lovely leafy berry core that runs the whole way through to a lovely finish of fine mineral tannins. The oak is totally integrated and allows the fruit characters to star. Stump Jump will go perfectly with a juicy steak or gourmandise burger tartare.
