Shiraz Heathcote Victoria
Heathcote is blessed by the richest, most ferrous terroirs in Australia. The deeply coloured Cambrian soils are heaven sent for Shiraz, having established Heathcote as one of the most distinctive red wine appellations in the world. De Bortoli excel at Shiraz and have long made it their business to retain those vineyards which can produce the finest fruit. Their award winning team have chosen sites on the red volcanic soils of northern Heathcote to construct a wine that's generous in flavour and velvety in texture, perfect for bringing out the best in good food.
Vinified at the Dixon's Creek wineworks from grapes grown to choice Heathcote vineyards. Harvest takes place only when grapes have achieved optimal ripeness while exhibiting the requisite firm Shiraz tannins, good varietal fruit and refreshing acids. A combination of winemaking techniques are employed to produce a wine of complexity, fine textural mouthfeel and exquisite balance. Grapes are destemmed and crushed into a mix of static and rotary fermenters. The musts are vinified for up to a fortnight on skins, a regimen of plunging and pumpovers extract flavour and tannin. Parcels are fermented to dryness, a component is treated to a selection of older oak barrels for a course of maturation.
Deep red, purple hues. Sweet berry and spice perfumes over hints of black pepper, lifted plum notes. A generously proportioned, medium bodied palate showing bright, lifted berry and fruit cake flavours together with undertones of pepper, supported by fine tannins and cedary vanilla oak. Fashioned to drink brilliantly immediately upon release, the Heathcote of choice to enjoy alongside steak or succulently braised meats.
