Semillon Chardonnay Riverina New South Wales
Bilbul wineworks in the Riverina produce many of Australia's most popular wines, national pleasures that are shared and enjoyed around the world. Harvests of Semillon have been assembled with components of good Chardonnay, select parcels are given a term of malolactic to soften the edges, creating texture and imparting charm, others are treated to an extended lees contact, adding texture and contributing mouthfeel. An engaging wine in adults only styling, complex and gently oaked, leesy and dry.
Bilbul plays a leading role in sustainability with a detailed action plan addressing water recycling, waste control, greenhouse gas emissions and key environmental issues. Healthy harvests exhibiting citrus, melon and stonefruit characters are picked at peak ripeness to capture and retain vibrant varietal characters. Fruit is gently pressed, naturally settled and racked to fermenters. Parcels are separately vinified for up to three weeks, some components are treated to French and American oak, the Chardonnay is sent for a course of malolactic. Most of the wine is held on yeast lees for up to a fortnight before the final assemblage, aimed at building texture and adding mid palate weight. Alcohol 12.6%
Light straw hue with lively green edges. Lifted quince and citrus with tropical stone-fruit characters, complimented by subtle herbaceous characters and a whisper of toasty oak. A very focused wine, showing great depth of flavour. An impeccably balanced palate finishes long with crunchy acid and tasty oak, lively and clean.
