Sacred Hill was named for a local hermit who habitated a low rocky outcrop which overlooks the Riverina plain. His story has achieved an almost mythical status in the area, he occupied a cave in the hillside for many years. Parcels of Chardonnay and Pinot Noir are harvested off vines with healthy and generous canopies which are closely managed to allow fruit to ripen gently and naturally. Fruit is pressed, settled and filtered into controlled fermenters. Juices are treated to a long cool vinification for optimal retention of freshness and delicacy. A second Charmat vinification contributes texture and builds complexity while introducing an elegant mousse to the finished wine.
Pale straw yellow hue, persistent bead. Fresh aromas with subtle yeast characters, an attractive nose of strawberries and cream, citrus notes in the background. The palate is dry and delicate, a very refreshing, easy drinking sparkling style wine, with fresh fruit flavours and a delicate, creamy mouthfeel, finishing with crisp acidity.
