A regimen of extended macerations, long slow ferments and judicious measure of outstanding quality oak, has achieved a Coonawarra Cabernet Sauvignon that's packed with loads of flavour, artisanally designed to get your very own Mojo working.
Mojo work to a belief that wine should tell a story about the terroir whence it originates, that the vines deserve lots of love and care, that the winemaking process should be the subject of minimal handling to allow growers to do what they do best. Parcels of Coonawarra Cabernet are cold soaked for three days, prior to warming and the initiation of a spontaneous ferment, assisted by the addition of Cabernet specific yeasts for a warm 18°C to 22°C vinification on skins over the course of a fortnight. Upon completion, batches are treated to an extended maceration and gentle airbag press into a selection of seasoned and new, European and French oak casks, followed by malolactic and a year's maturation.
Purple red with violet hues. Varietal herbaceous mint, briar and tomato leaf, blackcurrants, dusty cigar box and a hint of sweet toffee. Vibrant and youthful palate of blackcurrant pastille, wild berries and a lick of fresh stalky high notes meld with dark chocolate, a savoury touch of black olive and hints of nutmeg and cassis. Taut acidity and cedar oak hold the palate together, supple tannins contribute to the lengthy, dry and chalky finish.
