Chardonnay Limestone Coast New South Wales
Tempus Two imparts a level of style and sophistication into everyday sparkling wine enjoyment. Exclusively Chardonnay for elegance and finesse, while Blanc de Blancs is a pleasingly dry style, Tempus Two offers a concentration of lively flavours, peaches, passionfruit and hints of green apple, providing a measure of revitalizing fruit characters, balanced by a tangy, citrus acid finish. The perfect aperitif wine and sparkler of choice, to accompany spinach emmental souffle or freshly cooked crab.
Tempus Two are not just about good wine, their headquarters in Hunter Valley are an ongoing cultural exchange, an amphitheater for live music and centre for the arts. Harvests from good vineyards, trained to yield Chardonnay specifically for sparkling wine, are whole bunch pressed for the gentle extraction of juices, vinified and rested for two months on sedimentery yeast lees to infuse the palate, followed by partial malolactic. Crafted to the traditional Charmat sparkling vinification technique, components are treated to a secondary fermentation to achieve a fine effervescence, retain primary fruit character and capture all the vibrancy of the delectable Chardonnay Blanc de Blancs style.
Light golden straw hue with persistent mousse. Lifted fruit salad bouquet, dominated by peaches, passionfruit and lemon curd notes. A creamy palate of cut melon and honey dew flavours, custard apples, peach melba and prickly pear. Zesty and refreshing, soft fine effervescence completes a juicy, satisfying wine.
