Batches are treated to a gentle rotation in vinomatic fermenters, worked to a minimal amount of pumpover, as soft extraction of judicious tannins are essential. Upon completion, batches are held for a term of post ferment maceration, followed by racking to a selection of seasoned and new French and American oak barrels for maturation.
