Castelli are all about harvesting precious parcels of fruit, to achieve vintages of the finest artisanally crafted wines. Botrytis affected grapes are painstakingly picked just as the noble rot reaches optimal infestation. An extended term of skin contact imparts richly radiant hues, preparing the palate for the substantial complexity of flavours to come. Sweet, candied orange peel and marmalade exude from the glass, seasoned by saffron and wildflower spice. Intense, complex and pure, balanced by an exquisite core of crisp fruit acidity.
A very special block of Riesling vine, selected for its cool, foggy mornings and crisp, sunny afternoons, yields an amazing quality of Botrytis infected grapes. The hand picked fruit is treated to a course of skin contact, encouraging the shriveled berries to swell with the extracted flavours of maceration. Batches are pressed into fermenters and inoculated to a supplementary dose of Zymaflore ST yeasts. A long cool vinification at temperatures between 14°C and 16°C until 10°Beaume of residual sugar completes a luscious Botrytis wine, bottled promptly to retain the mouthfilling freshness of fruit while preserving revitalizing acidity.
