Henry Best was a highly industrious merchant and butcher who serviced Ararat miners during the Victorian gold rush. He planted thirty hectares of vine along Concongella Creek in 1866 and constructed a commercial cellar wineworks which continue to process the most spectacular vintages until the present day. The heirloom plantings of Henry Best remain productive, as some of the most historically significant rootstock in the world. Returning to his home along the Nagambie Lakes after the completion of service during World War II, Eric Purbrick discovered a cache of wine, hidden circa 1876 under the family estate cellars. Though pale in colour, it was sound and drinkable after seven decades. The promise of long lived red wine inspired Purbrick to establish new plantings at Chateau Tahbilk in 1949, today they are some of Victoria's oldest productive Cabernet Sauvignon vines. Having barely scraped through the ravages of phyloxera and a period of disrepute, the fortunes of Tahbilk were turned around by Purbrick who was the first to market Australian wine under its varietal name. The Pecorino grape makes a lovely fruit and mineral style of wine that's just right for Mediterrannean fare, it unfortunately was the agent of its own demise as the low yielding vines were replaced over the years with varieties which could produce a more bountiful harvest. Pecorino was rediscovered in the 1980s and is now grown in many parts of Italy. Grapes are all hand picked and destemmed for a day or two of vinification. A delicious drink of tropicality, papaya and balsamic zip, serve lightly chilled alongside white flesh fishes or a tasty fry of fresh sardines.
