Chardonnay Pinot Noir French Champagnes, Ay France
Madame Bollinger sanctioned Récemment Dégorgé for inaugural vintage 1967, affording true aficianados the opportunity to savour the excellence of Bollinger after being infused with the richness of six years bottle age on yeast lees. Dominated slightly by a larger proportion of Aÿ and Verzenay, Bouzy and Tauxières Pinot Noir, the ancient Crus of Cramant and Le Mesnil-sur-Oger, Oger and Cuis for Chardonnay. Treated to the extravagance of barrel ferments and minimal Extra Brut Doseage of three grams per liter, RD is James Bond’s favourite Champagne.
Golden hues, refined perlage. Bouquets of ripe orchard fruits, particularly quince, boulangere and honey biscuit notes, roasted notes, cocoa and cashew, nutmeg and star anise. Full bodied palate, powerful but balanced and controlled, a persistence of creamy baked characters, nougat and Nice, lingering mineral finish, apple flan, parfait and Crème de citron.
