The Signature has been around for almost fifty years and has developed a loyal following, due to its quality and consistency of style. The defining Australian Cabernet Shiraz, Signature has set the benchmark for this iconic style, drawing on Yalumba's baronial resource of vineyards. A sentimental favourite, with a heritage deeply rooted in Barossa viticulture, Signature has an ability to unravel a myriad of flavours when enjoyed in it's youth, and to age gracefully in the bottle.
Cabernet Sauvignon from Krondorf and Tanunda with a small percentage from the Eden Valley. The majority of Shiraz is sourced from the Eden and Barossa Valleys. Vines are all mature with yields generally between two and five tonnes per hectare. Soil types vary from red brown earth over red clay, sandy loam over clay to sandy soils. Grapes are hand picked and crushed into eight tonnes open top fermenters. Wild, yeasts present on the grape skins initiate fermentation, cultured yeasts are later added. Fermentation and cap skin management is controlled by a unique Yalumba designed plunger. Matured twenty two months in a combination of American, Hungarian and French oak hogsheads & barriques. Alcohol 14.5%
A very deep dark red. Generous sweet dark chocolate and warm fig, blackcurrant and cedar on the nose. Suggestions of licorice and spice tightly interwoven within the creamy oak. The palate is broad shouldered, intense and concentrated with lingering red and black currant notes. Powerful but restrained, finishing with a mouthful of fine layered tannins, a wine of richness and complexity. Perfect with braised lamb shanks.
