Sauvignon Blanc Riverina Victoria
The inspiration for Vat Series came from times when Deen De Bortoli would personally make up the blends, then chalk numbers on vats to identify them. Parcels of fruit grown to choice vineyards are earmarked for their bright varietal profile, harvested and assembled in the De Bortoli wineworks at Bilbul, to be crafted by the intrepid team into a fresh and crisp young wine, that's highly articulate of all things in fine Sauvignon Blanc.
The fortuitous climes around the broad expanse of De Bortoli's salubrious Riverina vineyards, consistently deliver harvests of optimal ripeness, fruit of exemplary varietal expression. Choice parcels of Sauvignon Blanc are gently pressed to retain freshness without any unwanted phenolics. Juices are clarified and fermented at warmer temperatures on gross solids, a third of components are vinified in seasoned French oak barriques. Batches are held on yeast lees sur lie for three months prior to assemblage. Alcohol 11.5%
Light straw colour with lovely green hues. A clean, fragrant, slightly grassy aroma with underlying tropical characteristics. The fresh grassy aromas and gooseberry flavours are wonderfully balanced with fantastic texture and length. A vibrant palate with delicacy, balanced fruit and a good acidity. It's fruity lemongrass character makes Vat 2 a match to fresh seafood, Thai and Vietnamese faire.
