Originally formulated to deliver a forward drinking series of varietal wines with smoothness of palate and exemplary balance all around, the Deen range collates fruit from fine vineyards that are closely managed with the accent on quality harvests from environmentally responsible viticulture. A generously proportioned, everyday drinking Shiraz, with ample spice/ cherry/ plum characters over a length of charming, velvet tannins.
De Bortoli command a large expanse of viticulture throughout the southeast of Australia. Each individual parcel is selected on the basis of ripeness, varietal character and balanced acidity. Collating the pick of harvests which can form a synergy is important to creating complexity while infusing texture and preserving varietal expression. Components are teated to a cool maceration and minimal handling for gentle flavour, colour and tannin extraction. Batches are vinified for a week on skins in forty tonnes fermenters at 22°C to 30°C. Vat 8 completes full malolactic before a spell of maturation in a combination of American and Hungarian oak barriques. Alcohol 14.0%
Deep purple with crimson hue. Blackberry, plums and cassis bouquet with hints of cloves and black pepper all bound together by subtle well intergrated oak. A rich, intensely fruit driven palate showing plums and spice upfront supported by smooth chocolaty tannins, before a clean, cherry lined finish.
