Chardonnay South Australia
Jacobs Creek are known for their attractive, medium bodied Chardonnay, a deliciously nectarine flavoured wine, highly appealing for it's purity of fruit, elegance and finesse. As the retention of primary varietal characters are the main objective, the ferment is clarified and inoculated to neutral wine yeasts. Post fermentation, components are treated to a rich, extended lees contact and a touch of malolactic which adds complexity.
Regular visits to the vineyards by the Jacobs Creek team are essential for assessing flavour development and determining optimal harvest dates. Extensive resources and logistic management are employed to ensure that each parcel is picked at optimal maturity. When the fruit quality is excellent, displaying clean varietal characters and ripe, juicy acids, grapes are harvested throughout the cool of night and immediately transported to the winery for dejuicing with minimal skin contact. Every effort is taken to reduce phenolic extraction from skins, minimising the need for fining. This is reflected in the finished wine, which is soft and flavoursome, exhibiting exemplary balance and fine integration. Alcohol 12.7%
