After migrating to Australia in 1961, Wolf Blass found much inspiration from the grace and fortitude of the native South Australian eaglehawk. In 1966 when Wolf Blass began establishing his own winery, he named it Bilyara, aboriginal word for eaglehawk, to this day an image that's synonymous with Wolf Blass wines around the world. Eaglehawk Cabernet Sauvignon remains faithful to the Wolf Blass house style of flavourful, well balanced wines, offering a relaxed and approachable experience for everyday enjoyment.
Parcels of Cabernet Sauvignon are collated from vineyards which have been earmarked by the Wolf Blass winemaking team on the basis of quality fruit and excellent flavour profile. Following the harvest, grapes are removed from bunch stems and gently pushed through rollers to split berries and release juices, batches are inoculated with selected yeasts. Upon completion, the fermented musts are pumped through a press to separate juices from skins, components are gently pressed and sent for a term of maturation under Fench oak. Components are racked and fined prior to assembling into the finished wine. Alcohol 13.5%
Ruby red, crimson hues. Eaglehawk displays attractive spice, mint and berry fruit aromas, supported by a hint of supporting oak. Cherries and dark currant to the palate, spiced plum and liquorice notes. Solid, mouthfilling tannins and velvety textural mouthfeel, all the way to a soft and lingering finish. Enjoy alongside duckling or beef, marinated grills or a truffle and root vegetable flan.
