An exquisitely balanced, fruit driven Cabernet Sauvignon, demonstrably Wrattonbully in its excellence and affable nature, brimming with varietal black bramble fruit and supported by a flourish of fine tannins which are brought forward for early drinking. The label here depicts a scarecrow, Yalumba's guardians of choice, who keep a watchful eye over the ripening grapes and community of winged revellers during the down time of vintage festival.
Yalumba adopt a holistic approach to environmental practices, focusing on the sustainability of natural resources. Grapes are sourced from superb vineyards in Wrattonbully and Barossa valley. Components exhibiting rich chocolate and dark plum characters, others contributing elegant berry flavours, are all essential for achieving a fully integrated, stylish Cabernet wine. Parcels are crushed, inoculated and vinified in a mix of static potter and rotary fermenters. Warm temperatures at the onset and a maceration of several days post ferment, serve to extract soft fleshy tannins while building structure are followed by a term of age in a selection of French, American and Hungarian oak hogsheads and barriques.
Dark scarlet with purple hues. Classic varietal aromas of crushed blackcurrant, violets and mint leaf, enhanced by hints of dusty French oak, cinnamon and tobacco. Full bodied and richly flavoured, showing mint leaf, blackcurrant and chocolate hints. Balanced ripe tannins parade across the palate, leading to a long and persistent finish.
