Cabernet Sauvignon Riverina New South Wales
Awarded 3 GOLD MEDALS and made exclusively from Cabernet Sauvignon, picked extremely ripe to maintain the full sweetness of the style, and sourced primarily from McWilliam's own vineyards in the Riverina wine region in New South Wales. Partially fermented on skins for eleven days to extract maximum colour and flavour, a high quality grape spirit distilled at the McWilliam's Hanwood winery, near Griffith was added to the ferment in stages to assist with the integration of flavour. Receiving no oak treatment, this is a maverick fortified, brimming with riddles and complexities.
A small proportion of the fruit was sourced from local growers, crushed into open fermenters, drained, pressed and then fortified with a delicate blend of neutral grape and brandy spirits, which has enabled the wine to develop wonderful complexity and depth of flavour. The final blend was cold stabilised, filtered and bottled in September. This early bottling has enabled the wine to retain its ripe berry fruit characters. The 1982 Vintage Port has been bottle-aged in perfect, temperature controlled conditions in McWilliam's private cellars until release.
The 1982 vintage shows brick red colour with tawny hues. Lifted pungent tobacco leaf, molasses and ground coffee are evident on the nose, with nuances of vanilla Armagnac spirit. There are flavors of prunes, pecans, pecan tart, sweet pumpkins and cloves. On the palate rich, sweet molasses characters and savoury leather and spice, combine with a dry, lingering finish. Wine lovers are encouraged to enjoy this wine now or over the next few years to experience it at its absolute best.
