Chardonnay Clare Valley South Australia
From fruit harvested off estate vines planted to the finest Chardonnay growing terroirs in Valley Clare. Taylor continue to claim a staggering weight of accolades and awards at national competitions, much of it for their superlative white wines. There's never any expense or effort spared by Taylor in a pursuit of the highest quality fruit, employing a combination of old and new world viticulture. A seamless palate of clean varietal fruit framed by judicious oak, attractive melon flavours, nuttyness and spice, Taylor get their Clare Valley Chardonnay just right.
Taylor's estate owned and managed vines are grown to rich Clare Valley Terra-rossa, brown loam over limestone soils. Grapes are harvested at night and delivered immediately to the winery. Bunches are completely whole berry pressed and chilled. After a short period to settle the juices, the majority of components are filled to a mix of seasoned and new French oak barrels for vinification through the action of cultured yeasts. The balance is treated to a course of wild yeast vinification in fermenters. All parcels are lees stirred throughout four months of activity. Upon completion, batches are assembled, stabilised and fined for bottling. Alcohol 13.2%
Pale straw colour with a green hue. Delightful aromas of white peach, nectarines, melon and pineapple join subtle hints of savoury cashew and spice. Fresh flavours of stone fruit combine with a touch of tropical pineapple, cashews and an underlying creaminess from extended lees stirring to deliver a superb, mouthfilling Chardonnay wine. A clean, elegant finish with great persistence. Magnificent with mussels in verjuice and wine sauce.
