Old Richmond Gaol was one of Diemen Land's first prisons, built by the convicts themselves, of good old fashioned granite blocks, laboriously hauled in wooden hand carts and quarried from the ominously monikered Butchers Hill. Johann Gottfried Scholz served in the Prussian army as a battlefield bonesetter, before joining the great emigration of Lutherans from Silesia to Barossa Valley. After building a family homestead along the alluvial banks of Para River, Gottfried established a mixed farm of livestock and crops, fruit trees and grapevines, Semillon and Shiraz. His acumen at healing fractures and setting splints made Gottfried a leading local identity, as his homestead cottage evolved into the Barossa's very first private hospital. Chardonnay Chablis France
The wines of Chablis are infused by the fossil rich, oyster shell soils, to be distinctly flinty with a characteristic mineral edge. The Premier Cru climats on the Cote des Vaillons however, are planted to a preponderance of compacted limestones, yielding a slightly fresher, floral and fruit driven style, a dash of minerality and lovely roundness. William Fevre own just under three hectares of Premier Cru Vaillons, treating the hand picked fruit to a combination of barrel ferments, sedimentary lees exposure and a year of age in a selection of well seasoned oak.

A family that has been in the Chablis region for more than 250 years, William Fevre's father was already a great winemaker

His son William founded the Domaine de la Maladiare and announced his first harvest in 1959. For many years, William Fevre (who to this day enjoys a very good reputation as a defender of historically renowned terroirs), has worked each plot keenly and skilfully so as to make wine whose personality reflects the authenticity of the soils from which they spring.

In 1998, the venerable Henriot family from Champagne succeeded him. To continue these focused efforts, the Domaine was taken up with the constant desire to make indisputably genuine and fine wines, and above all with bringing along a very personal expertise in Chardonnay. All the efforts have but one goal, to finely express the most subtle variations in the greatest Chablis crus.
