Adam Marks is a chicken enthusiast. In his pursuit of the ultimate eating fowl, Marks traced a route throughout the barnyards, orchards and vineyards of La Belle France. He ultimately settled on the Harcourt Valley of greater Bendigo to establish his own agricultural concern in 2004. Succulent roasting chickens and ripe juicy apples soon gave way to a range of world class wines, which are defined by their regional eloquence, sublime excellence and bucolic grace. Jack Mann reigns eternal as the greatest winemaker in the history of the Australian west. Jack Mann's son Tony grew up amongst the vineyards of Houghton but took a keener interest in things Cricket. He exelled at both pursuits but is best remembered as the legendary leg spinner Tony Rocket Mann. During his off seasons away from the pitch, Tony would plant parcels of vine alongside his illustruious father Jack and his own young son Robert. The fully grown Robert now makes his own wine, from fruit of the very vines sown by Jack and Tony Mann. Robert learned from his grandfather that great winemaking required a spiritual oneness with nature. The birds and the bees play a pivotal role in achieving a harvest of the most personable grapes. Halls Gap Vineyard was planted 1969, along the steep eastern slopes and parched rocky crags of Grampians Ranges, at the very beginning of a renaissance in Victorian viticulture. Since early establishment in the 1860s by the noble Houses of Seppelt and Bests, the region had earned the most elite peerage, a provenance of extraordinary red wines, bursting with bramble opulence and lined with limousin tannins. The Halls Gap property had long been respected as a venerable supplier to the nation's most illustrious brands. Seppelt and Penfolds called on harvests from Halls Gap for their finest vintages. Until 1996, when it was acquired by the late, great Trevor Mast, who was very pleased to bottle Hall Gap's fruit behind the exhalted label of Mt Langi Ghiran. It is while grapes are still growing on the vine that great vintages are made, the focus at Yabby Lake is to translate the fruit into a wine without any distortion. Yabby Lake are renowned for their splendid intensity and exquisite balance, speaking clearly of terroir and of clime, it's all about expression over impression. Engagingly complex with immense depth of character, the palate is powerfully structured, laden with impenetrably dark berry fruit flavous, lined with silky textures and driven by amazing persistence.

The viticulture at Yabby Lake is all about realizing minimal harvests of small bunches and tiny berries, more quality and just a little less quantity. Pinot Noir clones MV6, G5V15 and DV24, from Blocks 1, 2, 5 and 6, grown to the sandy clay loams of Yabbly Lake Vineyard at Tuerong. Grapes are hand picked, hand sorted and destemmed into traditional open top oak fermenters, a fifth is included as whole bunches. Vinifications are hand plunged up to three times daily as temperatures peak at 32ºC, batches are pressed off skins after a fortnight of ferments into a selection of 500 litre French oak puncheons for completion of malolactic and eleven months maturation.
Great depth of colour. Ripe black cherry, dark forest berries and asian spice with perfumed oak aromas. The palate displays a complex array of ripe small berry characters and spicy oak. Yabby Lake has excellent density, concentration and pin point balance. It is the texture and mouthfeel of this wine that is most exciting, rich and velvety with intense varietal fruit flavours and a powerful long finish.

Yabby Lake Vineyard was established in 1998 on Victoria's Mornington Peninsula, with the long-term goal of producing benchmark wines from the Burgundian varieties Pinot Noir and Chardonnay

Yabby Lake Vineyard is owned by Robert and Mem Kirby who have been intimately involved in the Mornington Peninsula region for decades. The Kirbys are joined by two outstanding and renowned winemakers: Group Winemaker Tod Dexter and Consulting Winemaker Larry McKenna. Tod and Larry are known for their relaxed and unassuming personalities, and they apply the same approach to their winemaking: they work with the grapes to develop beautiful and distinctly superior wines that are truly expressive of Yabby Lake Vineyard. The first vintage from Yabby Lake Vineyard was produced in 2002.

Significant resources have been devoted to developing Yabby Lake's vineyard to the highest possible standard. Regional and national experts were consulted on every aspect of the vineyard's establishment from soil mapping to climate analysis to vine layout. Careful selection of plant clones has meant that the winemakers at Yabby Lake Vineyard now have a diversity of grapes to work with. Yabby Lake Vineyard is owned by the Kirby family and they are supported by a remarkable team who are equally passionate about the vineyard, the grapes, and their long-term goal of producing the finest Pinot Noir and Chardonnay in Australia.

The stunning Mornington Peninsula is a patchwork of small premium wineries and vineyards. Located 60 kilometres southeast of Melbourne, the region is virtually surrounded by sea and enjoys a cool maritime climate. Established in 1998, Yabby Lake Vineyard is planted on one of the regions premier vineyard sites.
