The story of Langmeil begins with early Barossa settlement, planted to Shiraz by Christian Auricht in the 1840s, the estate vineyards were restored by the Lindner and Bitter families during the 1990s. Some of Herr Auricht's original plantings are still in production, three and a half priceless acres of gnarled, dry grown vines which provided the cuttings for much of Langmeil's refurbished heirloom parcels. The soils of Les Lys are a distinguished sub appellation within the greater Les Vaillons. Gently sloped soils which are higher in clay deposits than the surrounding terroirs of Chablis, yield a noticeably elegant style which appealed to French royalty. The exclusively hand picked fruit is treated to the traditional Burgundy style of barrel ferments in well seasoned oak, followed by a year or more maturation on fine lees. Her very fine perfumes and charming palate make Les Lys the perfect accompaniement to john dory fillets or dover sole.

The vines of Les Lys are planted to a unique clay slope on ancient Kimmeridgian subsoils. Grapes are all picked by hand into small 13Kg cases followed by a closer scrutiny over the sorting table. Bunches are treated to a brief 1½ to 2 hours pneumatic pressing for gentle separation of gross solids. Juices are lightly settled for the retention of light solids, half the batches are filled to a selection of well seasoned oak barrels for a completely natural course of ferments and spontaneous malolactic. The balance is vinified in fermenters to retain freshness of fruit character and character of the vineyard. The finished wine is matured for a year or more, partly on fine lees to infuse textural complexity.

A family that has been in the Chablis region for more than 250 years, William Fevre's father was already a great winemaker

His son William founded the Domaine de la Maladiare and announced his first harvest in 1959. For many years, William Fevre (who to this day enjoys a very good reputation as a defender of historically renowned terroirs), has worked each plot keenly and skilfully so as to make wine whose personality reflects the authenticity of the soils from which they spring.

In 1998, the venerable Henriot family from Champagne succeeded him. To continue these focused efforts, the Domaine was taken up with the constant desire to make indisputably genuine and fine wines, and above all with bringing along a very personal expertise in Chardonnay. All the efforts have but one goal, to finely express the most subtle variations in the greatest Chablis crus.
