Cabernet Sauvignon Margaret River South Australia
Margaret River makes intensely flavoured, varietally articulate, astonishingly well balanced wines. The remarkable microclimes, within the exclusive coterie of vineyards on the peninsula between Cape Naturaliste and Cape Leeuwin, have a style all their own. Cabernet Sauvignon from these beatified soils makes a world class wine, eerily similar to it's varietal siblings from Bordeaux. An intensity of dark berry flavours, brimming with enticing perfumes and the most gracious tannins, culminate on an intense closet spice, currant and ribena finish.
Cabernet Sauvignon is harvested throughout the cool of night and early morning before being promptly delivered to the wineworks for immediate transfer into controlled fermenters. A course of cold soak and vinification is followed by a spell of maceration to soften the palate and tame the firm Margaret River tannins. Upon completion, components are drained and filled to a selection of seasoned and new fine oak barrels for a term of maturation before assembling into the final wine.
Dark ruby hue. Complex fruit characters on the bouquet, brambleberry, cassis and scents of festive fruitcake, the savouryness of suet and curls of dark chocolate. Ripe tannins, a palate exhibiting intense concentration of flavour, layered with raspberry, liquorice and tobacco oak characters, before resolving on an engaging, dusty herb finish.
