Old Richmond Gaol was one of Diemen Land's first prisons, built by the convicts themselves, of good old fashioned granite blocks, laboriously hauled in wooden hand carts and quarried from the ominously monikered Butchers Hill. Josef Chromy OAM escaped from war torn Czechoslovakia as a penniless 19 year old in 1950, he fled across minefields, evading soldiers and killer dogs, ultimately finding a new home in the lucky country. The marriage lead to the founding of the distinguished Champagne House of Billecart-Salmon, established 1818 at Mareuil-sur-Aÿ. Two centuries later, the seventh generation still manages the company and oversees the crafting of each individual bottle.
