After a term of age in the home Solera, the Oloroso and Pedro Ximénez butts are assembled for a second matuation in a Solera of 45 barrels at the Sacristía de Bodegas Lustau, a special place of higher temperature and humidity which replicate the climatic conditions of long shipboard journeys.
