Shiraz Great Southern Western Australia
Xabregas are true terroirists, as the focus goes beyond the concept of new world wines. Xabregas don't adhere to the stereotype of an Australian style, choosing instead to bring the unique expression of their single vineyard estate to the fore. Vines were expertly planted to follow a strong line of alluvial iron based gravels that concentrate on the hill sides of each vineyard, reminiscent of the Rhone Valley's terraced slopes.
The wines of Figtree Lane vineyard express an incredible intensity of fruit flavour and depth. To take advantage of cooler temperatures, harvesting is carried out through the early hours of morning. Grapes are destemmed and crushed with rollers wide open to allow some whole berries through. The must is chilled on its way to tank and yeast is added the following day. Juices are vinified in ganimede fermenters at 25C for seven days, pumped over and treated to a membrane press. Pressings are returned to the free run, the wine is then transferred to a combination of new and prior use French oak barrels for completion of malolactic and a series of rackings over a period of twenty months maturation. Alcohol 15.0%
Intense, deep crimson red nose. Aromas of dark plum, cherries, spices and hints of chocolate. A complex wine with soft fine grained tannins supporting an abundance of fruit, drenched in savoury black fruits. Majestically balanced, finishing long and full. To accompany aged cheddar, game meats, spicy Thai or an exotic dessert of peppered strawberries.
