Ever since inaugural release, Eaglehawk have represented value and reliability. Crafted by an award winning team, Eaglehawk remains consistent to the Wolf Blass traditions of quality, consistency and style. In 1966 Wolf Blass named his nascent winery Bilyara, the Aboriginal word for eaglehawk, to this day an image that's synonymous with Wolf Blass. Fully ripened harvests of Chardonnay, sourced off the finest vineyards, are assembled into a wine that's the perfect accompaniement to all occasions and will flatter your favourite cuisine.
Chardonnay is sourced from a range of vineyards which can yield the quality of fruit worthy of Eaglehawk. Grapes are crushed, the musts are cold settled and pumped to fermenters. Choice yeasts are added and juices are treated to a temperature controlled vinification under state of the art conditions, the aim being to retain fresh fruit flavours. A regimen of traditional winemaking techniques, including lees stirring and malolactic are employed for select parcels, enhancing the palate, contributing complexity and developing mouthfeel. Eaglehawk is matured under a combination of French and American oaks to infuse richness and mellow the palate. Alcohol 13.0%
Light straw colour with vibrant youthful hue. Bouquets of tropical melon and peach with a touch of citrus and light vanilla oak. Clean and medium bodied, the palate is rich with varietal fruit, peach and honey dew melon, mango and grapefruit complexity. The vibrant tropical flavours are complimented by a judicious level of malo influence and supported by a backbone of supple, restrained oak. A finish that's refreshing and crisp.
