The Heathcote Wineworks were one of the first commercial wineries in central Victoria. Prominently placed along Heathcote's main boulevard, established by Thomas Craven in 1854 to cater for the huge influx of gold miners seeking their fortune. Thomas Craven was a purveyor of spirits and wine, he traded in gold, providing a lifeline to local prospectors. Harvests are collated from fine vineyards across the premiere viticultural precincts of Veneto. Grapes are crushed and treated to a term of cold settling for clarification, followed by inoculation to choice yeasts and controlled ferments at 16C to 18C. Upon completion, batches are assembled into the finished wine and bottled for a term of age before release.
Straw yellow hues. Floral bouquets, acacia blossom, mineral notes, slateyness and meal, persimmons and pear. An intense, exquisitely balanced palate, filled with the fruits of the orchard, apples, nashi and pear.
