Choice parcels of estate grown Cabernet and Shiraz, off vines up to sixty years of age, are vinified alongside harvests from leading Langhorne Creek growers. Grapes are picked after several passes amongst the vines and kept separate throughout the winemaking, to afford a number of options at completion. Bunches are destemmed and crushed to small open top fermenters, the musts are treated to a day of cold soak maceration. Batches are inoculated for vinification and pumped over two or three times daily throughout the vinification for optimal extract of colour, flavour and tannin. Components are pressed to a selection of seasoned French and American oak hogsheads for malolactic and a term of maturation.
Deep red colour. Lifted floral, chocolate and dark fruits, red berry notes and festive cake complexity, mint, spices and savory notes. The palate is layered with dark fruits, savoury vanilla oak and fragrant spice, over a length of fine tannins which see the Terrier resolve on a soft round, rich and silky finish.
