Watershed's distinguished vineyards are planted at the very heart of Margaret River's most prestigious estates, along Bussell Highway at the turn off to Leeuwin and Voyager. Fruit is treated to a Burgundian style of vinification and élevage, infusing the palate with creamy cryastaline textures and luxurious lees complexity. Awakening is vinified exclusively from hand picked grapes grown to a select block at Watershed, inoculated by wild indigenous yeasts and completely barrel fermented, for a wine of opulence and grace.
The founders of Watershed went to great lengths to secure the finest Chardonnay growing aspects in the land. A lengthy survey of the entire peninsula was undertaken to determine the most favourable soils and opportune mesoclimes. Terroir, place and selection, parcels of fruit and length and flavour concentration, complexity and intensity achieved through carefully selected hand picked fruit., finely crafted to a regimen of rich barrel ferments in new and one year old French oak, followed by a term of extended maturation to achieve west coast Chardonnay of the most outstanding quality and profound generousity.
Straw coloured, butter hues in the glass. Intense citrus aromas accompanied by notes of spice and roasted cashew. On the palate, the dense creamy texture is complemented by preserved lemon and mineral notes followed by a long spicy and biscut finish.
