Adam Marks is a chicken enthusiast. In his pursuit of the ultimate eating fowl, Marks traced a route throughout the barnyards, orchards and vineyards of La Belle France. He ultimately settled on the Harcourt Valley of greater Bendigo to establish his own agricultural concern in 2004. Succulent roasting chickens and ripe juicy apples soon gave way to a range of world class wines, which are defined by their regional eloquence, sublime excellence and bucolic grace. Catherine and Laurent Delaunay hail from the premiere viticole of Burgundy, where their family have been producing wine for generations. Following a stint in California they fell under the charm of the Languedoc Roussillon region of southern France. Passionate about good wine and the art of wine appreciation, Catherine travels the length and breadth of Languedoc Roussillon, visiting growers and attending to every detail, from vineyard to bottling. A balanced cepage of Chardonnay and Pinot Noir, Les Jamelles is crafted to the complete Methode traditionelle.
Wines with a unique spirit, Les Jamelles are hand crafted efforts from the splendid vineyards of Languedoc Roussillon. The high trellised vines of Aude Valley, within the foothills of the Pyrenees mountains, make the finest sparkling wines in all of southern France. The mature, low yielding vines, planted to higher altitudes of 500 metres and above, are stimulated by cooling evening breezes to produce wines of exceptional slowly ripened charm and character. Chardonnay and Pinot Noir grapes are totally whole bunch fermented, only the pure free run and finest first pressings are included. After a slow cool tank fermentation, Les Jamelles is matured in bottle on lees for a minimum of twelve months. Alcohol 12.5%
Pale golden straw with a fine and light, persistent bead. Light and very fresh with aromas of lemon citrus, white petals and musk. The palate is equally elegant and pure, with stone fruit and citrus flavours evolving towards an expression of brioche and soft, creamy mouthfeel. A fine line of mineral acidity adds length before a dry finish. A splendid aperitif wine and fine accompaniement to canapes, consomme and all styles of seafood or poultry recipes.
