Stella Bella take an opportunistic approach, estate vineyards provide much of the fruit but the team are always in search of growers with a Stella Bella vision. Each location must add to the stature and integrity of the finished wine. A collation of harvests, mostly hand picked Chardonnay, including Gin Gin, American and Burgundian clones, grown to the southern precincts of Margaret River. Batches are whole bunch pressed for optimal extraction of free run juices into a selection of seasoned and new Burgundy coopered barrels. Ferments are kept at 25°C to 26°C, stirred regularly until completion of malolactic. Components are assembled after a year in oak and assembled for six months prior to fining and filtration.
Limpid white gold hue. Aromas of stonefruits and cashew, white flowers and honey, creme brulee and hay. The palate is savoury and deep, gently viscous with a soft round mouthfeel showing nutty figgy flavours over a citrus twist. Perfectly integrated fine grained oak, natural acidity is fine and on point, soft mineral acidity to finish, making Stella Bella an accompaniement to marron or salmon, smoked duck or brie.
