Constructed during early settlement by a supervisor of colonial convicts, at the very epicentre of the market gardens which serviced Hobart, Clarence House is a heritage listed manor which remains largely unaltered since the 1830s. It passed through several hands before being acquired by the Kilpatricks in 1993, who answered the call of Bacchus and established the grounds to vine. There are now sixteen hectares of viticulture, several significant Burgundy clones of Chardonnay and Pinot Noir, with smaller plantings of Sauvignon and Pinot Blanc, Merlot, Cabernet and Tempranillo. What's most unique about the Clarence House vineyards are the soils and topography, a number of northeast slopes which catch the early sun yet shade the vines from afternoon heat. Tempus Two is the culmination of Lisa McGuigan's dream to create a world class tourism experience within an ultra premium winemaking estate. Tempus Two have broken the tradition with their tantalizing editions of dessert wine, sealing the precious liquid within hand blown bottles of Italian glass, which have claimed conspicuous design awards. Botrytis Cinerea Noble Rot is a fungal infection which causes dehydration and concentration of juices within the infected grape. There was much debate at Tempus Two about which style to produce from the intensely sweet Griffith Semillon. Natural sugar levels were heightened and grapes harvested late to enhance the intense flavours. Alcohol 10.0%
Colour is a deep golden yellow. Aromas of preserved apricots and candied citrus marmalade with hints of wild honey. Powerfully rich and opulent displaying the quintessence of botrytis semillon. The flavours of dried apricots, citrus fruit marmalade and underlined by a subtle touch of wild honey. Tempus Two displays restrained acidity ending with a refreshing citrus lift, balanced by the concentration of flavours that give overall elegance and finesse.
