Tempus Two is the culmination of Lisa McGuigan's dream to create a world class tourism experience within an ultra premium winemaking estate. Tempus Two have broken the tradition with their tantalizing editions of dessert wine, sealing the precious liquid within hand blown bottles of Italian glass, which have claimed conspicuous design awards. Botrytis Cinerea Noble Rot is a fungal infection which causes dehydration and concentration of juices within the infected grape. There was much debate at Tempus Two about which style to produce from the intensely sweet Griffith Semillon. Natural sugar levels were heightened and grapes harvested late to enhance the intense flavours. Alcohol 10.0%

The flavours of dried apricots, citrus fruit marmalade and underlined by a subtle touch of wild honey. Tempus Two displays restrained acidity ending with a refreshing citrus lift, balanced by the concentration of flavours that give overall elegance and finesse.
