Cabernet Sauvignon Shiraz Langhorne Creek South Australia
Simple, non intervention handling of the finest fruit is the Killibinbin approach. Roughly equal components Cabernet and Shiraz are sourced from the prestigious Metala vineyards. Langhorne Creek has won international renown for the quality of it's Cabernet Shiraz, in the enduring Aussie claret style. The extra time that Scaredy Cat has been afforded, ageing in a selection of fine oak barriques, has achieved a wine that's integrated and user friendly immediately upon release, the juicy upfront berry fruit is balanced by fresh acidity and soft, ripe tannins.
Cabernet and Shiraz from the distinguished Metala Vineyard are collated after several pickings and taken on a drive to the wineworks for an old school, hands on vinification, the aim being to fashion an authentic red wine with soul. Grapes are placed into open top fermenters and treated to a regimen of manual pumpovers before gentle pressing. Parcels which can best demonstrate upfront juicy fruit character with a juicy texture and velvety soft tannins are assembled into the final wine. Scaredy Cat is matured eighteen months in a selection of one year old French and American oak barriques, a component remains unoaked to retain vital fresh fruit character, the finished wine is bottled after minimal filtration.
Deep crimson red colour. Black forest cake with dark chocolate truffles on the bouquet intertwined by nettle, brambles and cassis aromas over an underlying aniseed and wild berry complexity. Lovely, fragrant blackcurrant and cedar flavours, fine tannins support the fruit and provide great extension through to the back palate. A lasting finish of currant, licorice seeds and eucalypt. Match with grills and hearty vegetarian recipes.
