One of Australia's great historical figures, Sir Douglas Mawson inspired the world with his courage and heroic feats. Yalumba is proud to have been a sponsor of Mawson's expeditions in the year 1911 to 1914. In honour of the estate's association with this eminent Australian hero, Yalumba releases Mawson as a Cabernet Sauvignon each year, a rich and complex wine displaying generous ripe berry flavours complemented by spicy French oak. Diligent vineyard management produces the quality of Cabernet fruit essential for the Mawson style.
The climate at Wrattonbully is somewhat between that of Coonawarra and Padthaway. Vineyards are sited on gentle slopes with rows running predominantly eastwest. The soils are well drained, being in the main classic Terra rossa red brown earth over limestone, the lodestone of red winemaking. The aim in the vineyard is to produce sustainable balanced crops of intensely flavoured grapes by setting moderate levels and encouraging canopy growth. Fruit is treated to vinification in a mix of static and rotary fermenters, encouraging good colour and fruit expression without producing aggressive or hard wines. Upon completion, components are matured in older American and French hogsheads and barriques.
A deep crimson red in colour. Bouquet of dark pastille and cherry pits, cassis and aromatic leaf notes, savoury oak adding complexity. The palate is bright and fresh with raspberry and satsuma plum fruits, supported by silky tannins and gentle oak before a lengthy, flavourful finish. A superb accompaniement to all things meat, eggplant lasagna or piquant sichuan faire.
