Merlot Yarra Valley Victoria
Great Merlot is made in the vineyard. At its best, it is like a fingerprint, inextricably linking the personality and mood of the land. Yarra Valley produces distinctive, elegant and complex Merlot wines. A single parcel of fruit, hand picked off Blocks 3 & 4 of Sexton Vineyard, are treated to an old world style of vinification, into a mostly Merlot wine, which can be topped up from year to year by portions of Petit Verdot, Cabernet Sauvignon or Franc, to enhance the tannins and build enticing complexity.
Grapes are all hand picked and chilled overnight, before being destemmed and hand sorted as single berries into small open fermenters. Three days of cold soak are followed by eight days of vinification, while being hand plunged twice daily. Batches are gravity drained, aerated and returned to skins daily during the peak of ferment. Upon completion, half the components are held on skins for a fortnight to develop tannins. The balance is drained at dryness into an airbag press and racked off gross less to oak for malolactic. Components mature eleven months in a selection of seasoned and new, Burgundy coopered French oak barrels, to be racked again and bottled without any fining. Alcohol 14.0%
Bright scarlet colour. Blueberry and briar fruit to the bouquet, plums and dark chocolate over sweet cocoa tar notes, cardamon and mulberries. Cocoa and sour cherries on the medium weight palate, framed by light oak and supported by supple fruit tannins. Ripe, lingering fruit flavours, excellent mouthfeel and a delicious, plum lined finish. A match to crispy pork, braised white meats and lamb.
