Discovered by Dr Bertel Sundstrup in 1987, after a long search for the perfect site, the amphitheatre known as Dalrymple is a mere twelve hectares of sun drenched bucolic idyll, at the very heart of superior viticulture on the beauteous Apple Isle. This is Piper's Brook central, a place of auspicious winegrowing climes, long hours of sunlight and extended ripening seasons, which yield fruit of remarkable succulence, gracious acids and satin tannins. Jacobs Creek are well resourced for the production of fashionable, stylish of Rose sparklers. Parcels of fruit from cooler districts achieve acid structure and length, whereas the warmer regions contribute richness and depth of varietal fruit characters. Gentle pressing in the winery produces juices of elegance, finesse and soft flavour, essential for the making of quality Rose sparkling wine. Following full malolactic fermentation, which adds palate richness and creamy complexity, the base wines undergo a secondary fermentation within their own bottle. A degree of natural pink colour is retained through the winemaking process to achieve the sparkling Rose style.
Soft pink colour with a fine and persistent mousse. The lemon citrus aromas of Chardonnay are in harmony with the cut strawberry and red currant characters of Pinot Noir. Generous red berry and citrus fruit flavours enrich the palate with creamy yeast autolysis providing depth and flavour. The wine finishes soft and round, with lingering berry and tropical citrus characters. To accompany hors d'oeuvres, smoked salmon and chocolate.
