About 1½ hours drive north from Adelaide lies the beautiful Polish Hill River district of Valley Clare. The area is blessed with a climate that's ideal for wine growing, a combination of consistently good winter rains, hot summers tempered by cool nights and long ripening period. Paulett's vineyards are at altitudes of 480 to 510 metres and face east. Soils tend from shallow red and grey loams over slate blue stone substrata and occasionally well structured red clays. There are five separate sites from which to draw Riesling. Grapes are crushed, the first runs are cold settled and the clear juices fermented at an even rate over the course of two or three weeks to capture and retain the essence of Polish Hill River Riesling.
Pale straw with light green hues. Elegant floral bouquet with tropicals and citrus hints driven by wonderful lime. Elegant and restrained palate, citrus and lime flavours with a wonderful spine of mineral like acid adding great balance, length and finish. Paulett will show lovely secondary aged characters of toast and honey as it continues to evolve.
