Lindsay McCall's enthusiasm for great wine began in the 1970s, he established his first Mornington plantings in 1985 on the site of a derelict orchard at Red Hill along Paringa Road. From day one, McCall focused on exactingly managing the soils and the vines, after completing his day job as local school teacher. His affinity for the land and astonishing feel for winemaking produced monumental vintages of Pinot Noir, which propelled the exquisite range of Paringa Estate wines to international renown. Returning to his home along the Nagambie Lakes after the completion of service during World War II, Eric Purbrick discovered a cache of wine, hidden circa 1876 under the family estate cellars. Though pale in colour, it was sound and drinkable after seven decades. The promise of long lived red wine inspired Purbrick to establish new plantings at Chateau Tahbilk in 1949, today they are some of Victoria's oldest productive Cabernet Sauvignon vines. Marlborough is New Zealand's most productive winegrowing area, located at the top of Island South. The region is renowned far and wide for producing the world's most mouth watering, flavoursome and zesty Sauvignon Blanc wines. It is the recognizable, pungent fruit characters which make Marlborough Sauvignon Blanc a distinctive genre of wine that's identifed internationally. Ta_Ku retain access to some of Marlborough's most bountiful vineyards. Fruit is crushed, the must inoculated to choice yeasts and treated to a temperature controlled vinification. A philosophy of minimal handling allows the wine to preserve the invigorating expressions of essential Marlborough fruit.
