An accomplished herdsman and shearer, Balnaves took up the challenge of planting vineyards in 1971. Returning to his home along the Nagambie Lakes after the completion of service during World War II, Eric Purbrick discovered a cache of wine, hidden circa 1876 under the family estate cellars. Though pale in colour, it was sound and drinkable after seven decades. Jean Bouillot was a wine and spirits merchant, one of the few of his day to specialize in Cremant de Bourgogne, Burgundy's methode traditionnelle sparkling wine. Blanc de Blancs is a petulant wine from white grapes, almost exclusively Chardonnay with a minor component of Aligote from Maconnais, Yonne and Châtillonais, vinified to true Methode Traditionelle. Parcels are treated to a pneumatic press, which crushes the fruit before undergoing fermentation in tanks followed by bottling. Louis Bouillot Blanc De Blancs is naturally fermented and matured twenty four months in its own bottle, achieving maximum aromatic qualities and finesse imparted by time spent on sedimentery yeast lees. Alcohol 12.0%
Bright straw yellow colour with tinges of green. Its herbaceous nose and soft citrus notes mingle with the fragrance of fresh, dewey grass and scents of freshly opened nuts.
