Years of patience and careful nurture by Moët Chandon goes into the crafting of Nectar Imperial, a Grande Champagne that is noteworthy for it's ability to please all five of the senses. The assemblage is built around the structure of Pinot Noir, supple and smooth, the finale offers supple overtones of baked honey and sweet almonds. This exceptional wine is made using only those grapes that display truly outstanding characteristics, a very special Demi-Sec (medium dry) Champagne, brimming with exciting flavours, richness and sensuality.
All great wines are the product of the perfect union of soil and climate. In Champagne however, the human factor is more vital than in any other winegrowing area. The people of Champagne have fashioned the soil and vines into exemplary vineyards. Moët & Chandon's cellars are carved out of the great mass of chalk that is characteristic of the region. The galleries, some of which date from as early as the company's foundation in 1743, stretch over 28 km in all and are situated on several levels under Epernay. With their long roads, wide intersections, seemingly endless staircases and pavements on which literally millions of bottles are carefully stacked, these cellars form a veritable subterranean town. Colour is a complicated, and candylike mid golden yellow. Like all it's sibling Moets, the Nectar shows a virile bead that rises like a fine steam through the exceptionally crystal clear liquid. There is a distinguishable brilliance in the masterfully co ordinated colour, clarity, effervescence and squeal of the bead as it rises and sparkles. There are delicious aromas of dried fruits, figs, raisins, apricots and cinnamon. Multiple and long lasting flavours of French pastries, butter brioche, marzipan, nougat and fresh mint leaf. Fully bosomed, refined and sophisticated, if opened to be enjoyed with food, Nectar Imperial merits company with the finest canapes, and peach or passionfruit derived desserts.
