Who doesn't just love sitting around with friends sipping on a pleasingly dry, salmon coloured cooler that's flavoursome and engaging, vivacious and fun, wine with a bit of attitude. Inspired by the deeply satisfying Rosé of Bandol, parcels of Yarra Valley grapes are fashioned into a cheeky textural style, bone dry and pale, because that is the way proper Rosé should be.
How do De Bortoli share the joy of relaxing over a glass of the characterful blush coloured wines of the French countryside with their friends in Australia? The answer is to grow and make it, right here in Yarra Valley. Fickle and temperamental to grow, Pinot Noir is much revered by the De Bortoli winemaking team for its ability to express terroir. Parcels which are ideal for a Rosé style are vinified through the action of wild indigenous yeasts in a combination of fermenters and small seasoned oak casks, to add complexity and textural mouthfeel. Act Two is treated to a course of malolactic and lees stirring to develop softness and contribute luscious pink creamyness to the palate. Alcohol 12.7%
Pale tawny rose. Musk and honey bouquet is followed by citrus and lemon notes, a hint of rose petals and raspberry. Lifted red fruits with an underlying savouriness. The nimble palate offers nuances of candied violet and summer berries, beautiful texture and mouthfeel derived from fermentation by wild yeast in old French casks. A good choice with turkey or guinea fowl, boudin blanc or ricotta desserts.
