Coonawarra graziers have access to the finest soils for viticulture. Doug Balnaves was born in the very heart of Coonawarra, quite near the sacred cricket pitch at Penola. An accomplished herdsman and shearer, Balnaves took up the challenge of planting vineyards in 1971. Working under the tutelage of legendary Coonawarra winemaker Bill Redman, Balnaves immersed himself in the culture of the vine, ultimately establishing a grande marque of Coonawarra and securing the inaugural presidency of the Coonawarra Vignerons Association. Xavier Bizot can make wine anywhere he pleases, he is a Bollinger and grew up amongst the Vignobles Superieurs of Champagne. Dunes is assembled from Chardonnay and Pinot Noir grapes that are born to sparkle, nothing is left to chance and there is geat attention to detail throughout the vinification. Sites that are capable of producing fruit with the desired sugar and acid levels, whilst being generous with heightened flavour profiles are selected for Dune. Gentle handling in the winery ensures the maximisation of varietal characters whilst achieving harmony and delicacy in the final Cuvee. A period of rest on sedimentery yeast lees to infuse Dunes with enticing autolysis characters, to add rich textures, and to enhance the mouthfeel and palate weight. A rich effervescence and persistent bead. A lifted delicate nose with strawberries and cream from the Pinot Noir and fresh lemon zest from the Chardonnay. The palate is fruit driven and fresh, with added layers of cream and a lithe softness derived from the secondary fermentations. Dunes is brightly balanced and fresh with an excellent mouthfeel, a long lingering finish to flavours of citron, white cherry and biscuit.
