Lindsay McCall's enthusiasm for great wine began in the 1970s, he established his first Mornington plantings in 1985 on the site of a derelict orchard at Red Hill along Paringa Road. From day one, McCall focused on exactingly managing the soils and the vines, after completing his day job as local school teacher. The purity of wine is a Burgundian tradition. At Maison Louis Jadot the philosophy is to respect origin of fruit, as each wine is encouraged to develop its own personality. Parcels of Pinot Noir typically grown to limestone over calcareous marl soils, are macerated for long periods in open wooden vats to extract colour and tannin. The base wines are all fermented by a number of dedicated growers over a the course of a fortnight, to the unique style of each individual sub region. At every stage of the process, human intervention is kept to a minimum. After final assemblage, the finished Cuvee is treated to an extended term of age, partly in small 228 litres oak barrels and partly in vats.
